The format is easy to follow and the information about what to plan and expect if you are starting a concession business is excellent. I used this book to start my own small concession and it saved me a lot of time, hassle and money. I still use it to for ideas or if I have any questions. - Review:: 'Complete and informative The price of this book may discourage purchase; however, I have found that it to be the only book that offers such complete information on the topic. It's poor quality paperback construction and the pictures (black and white) suggest a retail value of no more than $15.99. The author attempted to cover too many topics in this book which only scratched the surface (i.e. business liability and structuring). I would have liked to have seen sample menus, supply list for construction of the booths, and maybe a chapter called from sunrise to sunset (a day working the booth). Buy this book as reference if you plan to operate a food booth. It's the only book I've seen that covers this area of food sales.
