Cuisines of India- The Art and Tradition of Regional Indian Cooking

Cover of ISBN 0060935189Cuisines of India
The Art and Tradition of Regional Indian Cooking:
Book by Smita Chandra and Sanjeev Chandra. Ecco 320 pages Hardcover Published 2001-08-01. Description: To many North Americans, Indian food consists primarily of curries, kebabs, and chutneys. But Indian food cannot be contained to such a small sampling. In The Cuisines of India: The Art and Traditions of Regional Indian Cooking, author Smita Chandra takes us on a flavorful journey across India. "En route," she says, "we will sample the dishes that are unique to each region and relive the history that shaped its cuisine."

The Cuisines of India is divided into six chapters, each of which explores a distinctive region and its cuisine. While the recipes are presented in a clear and enticing manner, it is the history that accompanies each dish that really grabs you. Once you know that Emperor Shah Jahan (builder of the Taj Mahal) enjoyed a leisurely lunch of Paneer Makhai Masala how can you not try cottage cheese, cashews, and mushrooms in a creamy, buttery tomato sauce? You, however, will probably not be surrounded by an adoring harem as you eat.

Try Murgh Kabab (chicken marinated in minced herbs, sun-dried tomatoes, vinegar, eggs, and cream, grilled on skewers) with a side of Takari Thayir Sadam (yogurt rice with mixed vegetables). Vegetarianism is prevalent in many Indian regions, primarily for religious reasons, and has inspired the creation of many a simple but savory dish: Bhutte ki Biryani (rice layered and baked with a spicy corn curry), Gobhi Mussallam (spicy baked cauliflower topped with cottage cheese, bread crumbs, and nuts), and Vendakai Thengai Mudri Poriyal (okra cooked with cashews and coconut). The Cuisines of India reminds us that behind every dish is a long and fascinating history of how it came to the table. --Dana Van NestDescription:

When you prepare Indian food, you become part of a culinary tradition that stretches back thousands of years. From vegetarian offerings unparalleled in their creative preparation and range of flavors to the elegant meat-centered feasts set before Moghul emperors, Indian cuisine is a luxurious Epicurean tapestry

Cuisines of India is a guided culinary tour across India's exotic regions -- from the lofty mountains of Kashmir to the sunbaked Malabar Coast, from the bustling streets of Calcutta to the majestic fortresses of Rajasthan. Steeped in history and filled with delightful tales and legends, it describes the impact of other cultures -- Middle Eastern, Asian, and European -- that have left their indelible imprint on India's famed cuisine. Embellished with maps and beautiful line drawings throughout, this indispensable guide provides breathtaking historical background in addition to dozens of recipes and preparation techniques specific to each particular region.

Each chapter explores the cuisine of a different region, describing its evolution and lore, and explains how history shaped local dishes and methods of cooking. The journey begins in ancient times with the fascinating saga of the Aryan tribesmen, and takes us to the fabulous temples of South India, where lavish feasts were prepared for the gods, We sample the sumptuous banquets of the Moghul court and dine with the European explorers who came to India in search of spices.

Recipes are drawn from the many regional cuisines of India. Food from the Hindu heartland of Uttar Pradesh is simple, lightly spiced, and vegetarian. South Indian cuisine is famous for its spicy rice, vegetable, and seafood preparations. North Indian Moghlai cuisine-heavily influenced by Persian and Turkish techniques such as cooking with yogurt and using apricots, raisins, and almonds in meat dishes-provides its own cornucopia of mouth-watering combinations. Traditional rustic Punjabi fare includes freshly harvested greens cooked with meat, while the royal kitchens of Hyderabad provide recipes for succulent kababs. Dishes from Goa, Bombay, and Calcutta show a fascinating blend of Indian cuisine with Portuguese, British, and Chinese culinary traditions.

Cuisine of India is more than a cookbook -- it is a gateway into an extraordinary culture. In these pages India's history is observed through the kitchen door, and the mysteries of an ever-changing cuisine are revealed.

      • Review:: 'Excellent Introduction to the World of Indian Cooking! I'm not the type of person who usually READS a cookbook, but this one has some very interesting stories woven in with the recipes. The author goes through an essential "shopping list" of spices with their descriptions at the beginning, and once I enhanced my spice collection a bit, I was ready to go! The recipes are very approachable; not too tedious or demanding (at least not the ones I've tried so far). This book will certainly have a premium spot in my vast collection of cookbooks, and will get frequent use in my kitchen, as its recipes are getting rave reviews! Highly reccommended!!
      • Review:: 'Not a 'Must-Have', but still worthwhile I collect cooking books and have a massive collection, with a fair emphasis on east Indian cuisine. This book rose above the herd because it has a decent discussion of history and tradition etc, and is well organized. The recipes are fairly pedestrian (ie: not that very different than you can find in other Indian cookbooks), but I wa not sorry I bought it.
      • Review:: 'Greatly disappointed INdian is perhaps my favorite cuisine & I've been to allot of Indian restaurants and own several books. This one though was mediocre at best. Allot flash in the pan, nothing spectacular though it was nice to see the book divided into 6 chapters for the 6 regions of the subcon.
I think that the sisters tried to make the recipes harder & more complicated than they are in the name of authenicity. Most of these recipes were very elaborate with lots of steps.
I would recommend Lord Krishna's book, Julie Sahni's or one Madhur Jaffrey's early books instead.
      • Review:: 'must own book first off, although i think this is a must-own book, i would not recommend it as a first-buy indian cookbook. for someone completely new to indian cooking, one of the classics by sahni or jaffrey would be better as an introduction and basic resource. for instance, if you don't know what paneer is, the authors' unexplained use of the term "cottage cheese" when paneer is called for will be more than confusing. but, as a book to expand your repetoire of indian recipes, this is fabulous! anyone who has more than one or two indian cookbooks has probably noticed the surprising duplication, even between authors, of the same recipes, which is amazing, given the vastness of india and the incredible number of cultures in it. however, this book has more unduplicated recipes than any of my other indian cookbooks (and i have far too many), and i look forward to cooking all of them. but for me, the second, equally important reason to buy this book is the wonderful introductory paragraphs before each recipe. it seems that it is mandatory for indian cookbooks to inlude history as well as cooking instruction, which is no bad thing, given the ignorance of other cultures in this country. i have enjoyed and learned much from the texts of other indian cookbooks. however, the authors of this book write exceptionally well and amusingly, and the subjects not only include indian history, culinary and social, but even anecdotes about apicius, the roman credited with writing the first known european cookbook; a dishonest medieval english baker; elihu yale, for whom the college is named; and many other fascinating known and unknown people. there are quotes from the diaries and writings of european visitors to india from the 17th to the 19th centuries which are fascinating. (sample fascinating fact: poundicherry was a french colony for three centuries, and the cuisine reflects this.) there are stories of indian rajahs and the english raj. if fact, it might be difficult to keep your attention on the recipes while cooking, there is so much else that is interesting in this book. the line drawings are another plus. all in all, this is a superb book--tempting, wide-ranging recipes, entertaining reading and beatiful illustrations.
      • Review:: 'A very enjoyable cookbook! Being new to Indian cooking, I immediately appreciated this book for completely describing everything. The author writes with a very personal touch in the written passages before the recipes. What I really like is that she offers suggestions for substitutions, and where to get ingredients that I was not normally familiar with. Many of this dishes have ingredients that have been found in my kitchen for years. The book is broken down into various regions and the recipes have wonderful introductions to give a brief history on the recipe.
I would highly recommend this well written book to anyone interested in Indian cooking.

Steel Shadows- Mural and Drawings of Pittsburgh (Art, Architecture, Regional)

Cover of ISBN 0822957485Steel Shadows
Mural and Drawings of Pittsburgh (Art, Architecture, Regional):
Book by Douglas Cooper. University of Pittsburgh Press 174 pages Paperback Published 2000-11. Description: Imagine walking along the two-hundred foot expanse of a charcoal and paper mural, the cityscape of Pittsburghs past and present unfolding before your eyes. You stop intermittently, spotting a particul Steel Shadows, you dont have to visit exhibition halls at Carnegie Mellon University or the John Heinz History Center to enjoy Douglas Coopers unique, realistic and highly personal images of Pittsburgh. Steel Shadows brings his large charcoal and paper art home to you. This unique collection of imagery and prose combines the personal with Coopers highly technical and intricate craft. Through narrative and illustration, Douglas Cooper will show you a Pittsburgh you know and love, but have never seen in quite this way before.

Cooper details the inspiration for his artistic vision, as well as the formal properties of his art and how it relates to architecture. The book features double-page spreads and excerpts from Pittsburg) panoramic murals in Frankfurt, Germany, and in New York, Philadelphia, and Pittsburgh. A central theme of his work has been the overlay of the multiple meanings people attach to their surroundings. In three of his murals, Cooper has worked with the elderly and incorporated their stories into his art. Cooper has received grants for his work from the National Endowment for the Arts and has been honored by the American Institute of Architects for the contribution his murals have made to architecture.

      • Review:: 'Cooper Breaks New Ground Douglas Cooper's Steel Shadows is a gem. Although it is specifically about Pittsburgh, it is really about how we see, portray, and interact with the landscape around us, urban or rural. Cooper is first a wonderful visual artist, and has allowed us a rare glimpse into his methods here. Rather than look far afield for his subject matter, he has taken on the challenge of visioning his native city, in immense and powerful murals, which are remarkably well re-produced in the book. Cooper can also write, and illustrates with his words the process of producing the murals and the logic behind them. Together, his drawings and text serve to usher us into the world of Pittsburgh, that singularly muscular and angular American city, and to cast some light on what it is to be an artist at the top of one's game, working hard to make that art - in this case drawing - relevant and useful in a changing world. A very pleasing, entertaining, and thought-provoking book.
      • Review:: 'Pittsburgh and Cooper: A 360 Degree Panorama Imagine you are standing at the top of a cliff in a hilly city or on top of a skyscraper in a flatter one. Slowly rotate 360 degrees, taking in all that you can see as you turn. Then imagine doing the same thing 10 years ago, 20 years ago, 30 years ago and work older landscapes into your contemporary ones. Then imagine wrapping all that you see and imagine onto a flat surface. I don't think I could actually do that - but Douglas Cooper can and has. Cooper's new book, STEEL SHADOWS, does three distinct tasks. It offers an insightful autobiographical sketch on how Cooper, an architect/professor at Carnegie Mellon University, came to draw the way he draws. Writing in a naive style, he recounts 2nd grade experiments on perspective, his education at Carnegie Tech, his sojourn to Europe to study buildings, and the evolving style which puts myriad angles continuously onto a flat piece of paper in a way which makes sense - to the viewers as well as to Cooper. The second task is to help the reader fall in love with the landscape of Pittsburgh as Cooper did, first as a 6-year-old enamoured of trains. Cooper's drawings in STEEL SHADOWS, excellent reproductions of the massive murals installed permanently in a variety of sites in Pittsburgh, give one the feel of the steep mountainsides, winding streets, and crumbling industrial landscape of the city. Cooper seems to love it all, and his amazing drawings draw us into his love affair. The third element of STEEL SHADOWS is an illustrated collection of writings on Pittburgh including excerpts from architectural historian Franklin Toker, poet Peter Blair, writer Annie Dillard, historian William Serrin, and novelist Marcia Davenport. My favorite excerpt in the last section is actually by Cooper, himself. "Living with Meg across from Forbes Field" allows him to indulge in his second passion after Pittsburgh: baseball. Along with stunning drawings of the old ball park, Cooper tells us of the neighborhood of South Oakland, life in the bleachers in Forbes Field, and his life as a young married man sitting on his porch directly across the street from Forbes Field waiting for foul balls to be hit out of the stadium and to him. One might question whether this book would be interesting to those who are neither artists nor Pittsburghers. I am not an artist, but as a longtime fan of Cooper's work, was intrigued with his thoughts about how he came to draw the way he does. His writing is simple but not simplistic; even technical sections were clear to me, a layman. I am a Pittsburgher, so cannot state how one from another city will enjoy STEEL SHADOWS. Cooper's drawings, though, transcend the specific place he portrays. His urban landscape and his vision of the ways in which places and times come together have universal appeal. It is Pittsburgh that he draws, but it is Cooper himself as well as his city that we see.
